Preheat the oven to 185 °C. Whip the egg whites until stiff.

Sift the ricotta cheese into a large bowl and knead it with the yoghurt, egg yolks, sugar and a pinch of salt, using a whisk.

Incorporate first the flour, then, gently, the beaten egg whites into the mixture.

Pour the mixture into a hinged mould (24 cm diameter) with the bottom lined with baking paper and bake for 40 minutes.
