In a bowl, pour the flour, sugar and very cold butter cut into cubes. With your fingertips, work the ingredients until you have a sandy mixture.

Add the whole egg and the yolk and mix well until the mixture is smooth and homogeneous.

Wrap in cling film and put in the fridge to rest for 30 minutes.

After the resting time, roll out the pastry into a disc the size of your tart mould, prick the surface and spread the pistachio cream on top.
