In a large pot, cook the pasta sheets for about 4 minutes in salted water and a little EVO oil

Then remove them and dry them in a clean napkin.

In the same water, dip the coarsely chopped chicory and cook it for 4 minutes

Drain the chicory and then toss in the fried vegetables. Clean the chicory and roughly chop it. For the chicory: chop the onion and garlic very finely and sauté in a non-stick pan.
